OUR CHEESE

Gouda
Our delicious gouda has won awards for its creamy texture and delicate flavor. It's perfect with fruit or salads.

Smoked Gouda
We add a mild hickory smoke to our award-winning gouda. Try pairing it with burgers, tri-tip, or other meats.

Mustang Cheddar
Aged for six months, our Mustang Cheddar is a smooth, rich, medium-sharp orange cheddar.

Smoked Cheddar
We craft a traditional orange cheddar cheese and add a mild hickory smoke to complement the sharpness.

Chipotle Jack
Kick it up with a combination of spicy smoked jalepeņos and creamy Monterey Jack cheese. A great addition to omelets!

San Luis Lace
An award-winning Cal Poly original, the San Luis Lace is our take on Swiss cheese, with smaller holes (or "eyes") that give it a lacey appearance.

Reduced-Fat San Luis Lace
Our lower-fat version of San Luis Lace has 25% less fat but all the delicate, nutty flavor of the original.
